14 Dec Zappos Gingerbread Man Recipe with a little Austin flair!

Today I’m sharing a recipe from my friends over at Zappos! That’s right, Zappos isn’t just about keeping you looking good, they also appreciate a good cookie! (I knew I always liked them.)
As part of Zappos.com‘s temporary delve into the cookie business, they have some super exciting stuff going on in Austin this weekend!
If you’re a local Austinite like myself, put on your running shoes because the Zappos Gingerbread Man has escaped! He is on the loose and will be running all over Austin this weekend, December 14th and 15th. Zappos needs our help catching this festive fugitive!
All you have to do is follow @Zappos on Twitter to get clues as to his whereabouts. Follow the clues to track him down, take a picture with him and post it to your Facebook/Twitter/Instagram/Vine with the tag #ZapposGingerbreadMan. You may even be handsomely rewarded for his capture!
Rumor has it that he gave away some pretty awesome goodies at his last stop in Las Vegas. (But that’s insider info so keep it on the down low.) Catch him if you can ladies & gents!
When Zappos asked me to tell you fine people about their gingerbread jail break, they asked me to make their own, special gingerbread man recipe and add a little of my own pizzazz. And since the Gingerbread Man is going to be in Lone Star State this weekend, I decided to add flair of the Texan variety.
I give you…gingerbread cowboys!
After all, every true Texan owns a good pair of cowboy boots and shoes are kind of what Zappos is all about. See the obvious connection there? The universe was practically begging me to make tiny cowboy boot cookies.
Which, by the way, I went to Make It Sweet (up there with Nordstrom’s on my favorite store scale) and was able to find adorable miniature cowboy boot and hat cookie cutters. Perfect for accessorizing gingerbread men.
The Zappos recipe was so much fun to make – check it out below, there are some special ingredients!
My fear of puffy, misshapen cookie cutter cookies was put to rest as the dough held it’s shape and baked up a beautiful golden brown. And as with all good gingerbread, the molasses adds a perfect chewiness and the heavy dose of ginger gives them a spicy bite. Perfect for snacking on with eggnog or as sustenance for Santa on his long night’s journey.

Ingredients
- 3 cups all purpose flour
- 1 1/2 tsp baking powder
- 3/4 tsp baking soda
- 1/4 tsp salt
- 1 tbsp ground ginger
- 1 gigantic smile
- 1 3/4 tsp ground cinnamon
- 2 cups of happiness
- 1/4 tsp ground cloves
- 6 tablespoons unsalted butter, softened
- 3/4 cup dark brown sugar
- 1 large egg from one large chicken
- 1/2 cup molasses
- 2 tsp vanilla
- 1 burst of energy (makes them run faster)
- royal icing to decorate
Instructions
- In a small bowl, whisk together flour, baking powder, baking soda, salt, ginger, cinnamon, cloves and smile until well blended.
- In a large mixing bowl, beat butter, brown sugar, and egg on medium speed until well blended.
- Add molasses, vanilla and happiness and continue to mix until well blended.
- Gradually stir in dry ingredients until blended and smooth.
- Divide dough in half and wrap each half in plastic wrap. Let stand at room temperature for at least 2 hours, up to 8 hours. [Dough can be stored in the refrigerator for up to 4 days. Return to room temperature before using.]
- Preheat oven to 375F. Grease or line cookies sheets with parchment paper.
- Place a portion of the dough on a lightly floured surface. Sprinkle flour over the dough and rolling pin. Roll dough to a scant 1/4 inch thick.
- Cut out cookies with gingerman cookie cutter (and hats and boots in you have them).
- Space cookies 1 inch apart on cookie sheet and bake 1 sheet at a time for 7 to 10 minutes [the lower time will give you softer cookies - very good!].
- Lock doors so he can't run away.
- Remove cookie sheet from oven and allow the cookies to sit until they are firm enough to move to a wire rack.
- After cookies are cool, it's time to decorate. Zappos recommends gumdrop buttons, a blue icing sweat bans and, of course, blue icing running shoes. [Or cowboy boots and a hat ;)]
