Happy Belated Thanksgiving to all of you!!! I hope you and your families had a turkey-pie-stuffing-football-fun filled day! My day was spent with great food and even better company (shout out to Mom, Dad, Aunt Deb & Uncle Mark!).  It was just what the doctor ordered.

Let me tell you a little story about these muffins. It takes us back to last weekend, when I spent my wet, freezing cold Sunday being followed around by a camera feeling quite uncomfortable, actually. I’ve never been one that likes to be in front of the camera. I prefer to be behind it…preferably taking photos of food.

But lesbihonest, they offered me money to do it and I’m not one to scoff at a little extra income around the holidays, or at any time for that matter. Thus, I am officially an educational video star. And by the end, I was actually enjoying myself. Girl can ham it up for the camera when necessary.

This came about because my mom works for an ophthalmology practice. Somehow through her connections and a brief audition I landed a gig in an educational video about people who have had LASIK. Oscar-worthy stuff, I tell you.

The premise of the video is to show people with lasered eyeballs doing the things they love, free of the hassle of glasses or contacts. Well, there is very little I love more than this here blog so one of the shots the director wanted to capture was me in my condo baking and then shooting.

Guys, they made me eat muffins. On camera.

If you think first date eating is bad, try attempting to gracefully eat a muffin with a camera in your face.

Not. Attractive.

I’m talking crumbs alllll over my face. And my shirt. And probably in my hair somehow.

After each bite the director would tell me ok, one more time which in director speak means we’re going to do this five or six more times, get this woman some more muffins.

Needless to say, I’m sitting here, fingers crossed that they decide to cut those shots from the final product. Cuz lesbihonest, nobody looks cute biting into a muffin.

After I made sure the day was thoroughly awkward with my failed attempt at graceful muffin eating, it was time to film me photographing said half eaten muffins. For the sake of “movie magic” I had to shoot the muffins in an unnatural position, you know so as to look pretty on camera and all that.

Thus, I have to go ahead and apologize for the boringness of this post’s photos. I fully intended on re-shooting them later on. However, if you’ve even had five hungry men in your condo and the smell of fresh muffins wafting from your oven, you’ll learn that them muffins are gonna disappear real fast.

After our little post-shoot snack, I was nearly muffinless. I hope you will forgive me. I do promise you that they taste fantastic. And they are kind of, almost, maybe a little healthier than normal muffins. The whole wheat flour cancels out the refined sugars, right? At least that’s what you should tell yourself. It helps to remedy the snackers’ remorse.

Whole Wheat Banana Nut Muffins with Coconut Struesel Topping

Ingredients

    For the muffins:
  • 2 cups whole wheat flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoons cinnamon
  • 2/3 cup brown sugar, firmly packed
  • 1/3 cup white sugar
  • 1/3 cup canola oil
  • 1 egg
  • 2-3 very ripe bananas, mashed (~ 1 cup)
  • 1/3 cup buttermilk
  • 1 2oz. package macadamia nuts, chopped
  • For the struesel:
  • 3/4 cup firmly packed light brown sugar
  • 3/4 cup all-purpose flour
  • 1 tablespoon cinnamon
  • 6 tablespoons unsalted butter, cut into bits and softened
  • 1 cup sweetened flaked coconut

Instructions

    For the muffins:
  • Preheat an oven to 400F. Grease 12 muffin cups, or line the cups with paper muffin liners.
  • Make your struesel (recipe below) and place in refrigerator while you make your muffin batter.
  • Whisk together the flour, baking powder, baking soda, salt, and cinnamon; set aside.
  • Combine the brown sugar, white sugar, oil, banana, buttermilk, and beaten eggs and mix until well blended.
  • Pour the wet mixture into the dry ingredients and stir until combined. Fold in the macadamia nuts.
  • Divide the batter evenly in the prepared muffin pan. Sprinkle 1 1/2 tbsp of struesel on top of each muffin.
  • Bake in the preheated oven until the tops spring back when lightly pressed, 12-15 minutes, or until a toothpick inserted in the center comes out clean.
  • Cool the muffin pan on a wire rack for 5 minutes before removing the muffins from the pan.
  • For the struesel:
  • In a bowl stir together the brown sugar, flour, and cinnamon. Add butter, and use your fingers to blend the mixture until it resembles coarse meal.
  • Stir in the coconut and place in refrigerator.

    Ahh, these looks awesome. I totally don’t blame those guys for eating them all on you. Coconut is like the BEST THING EVER to add into streusel, isn’t it?
