24 Sep Tequila Shot Cupcakes w/Tequila Lime Frosting
Mondays are rough. Have something boozy.
If you’re not a tequila person or if you’re still hungover from this weekend’s festivities, you should probably turn away now. These cupcake are not for the faint of heart…nor the lightweight drinker. I developed this cupcake recipe in honor of one of my very best friends, who happens to also be a very bad influence when it comes to liquor. I intentionally added EXTRA tequila to this recipe so if after consuming 1 or 2 you find yourself singing Garth Brooks at the top of your lungs while eating the best pizza you ever had!!!…don’t say I didn’t warn you!
Tequila Shot Cupcakes w/Tequila Lime Frosting
Ingredients
- 1 box yellow cake mix
- 3 eggs
- 1/3 cup vegetable oil
- 1/2 cup water
- 1/2 cup tequila (I used Milagro Silver)
- 2 tbs fresh lime juice
- 1 cup (2 sticks) butter, softened
- 3 1/2 cups powdered sugar
- 3 tbsp tequila
- 2 tbsp lime juice
- large sugar sprinkles, clear
- sea salt
- 1 lime, cut into 1/4 inch slices then cut into 4 "pie slices"

Instructions
- Preheat oven to 350 degrees.
- In a large bowl combine ingredients and mix on high for 2 minutes.
- Pour batter into lined cupcake tins, filling about 3/4 of the way. Note: I'm not sure why, but these cupcakes didn't rise much. You may want to fill the tins a little fuller than you normally would.
- Bake according to package instructions.
- Cream butter until fluffy and pale yellow.
- Add tequila + lime juice and combine.
- Add powdered sugar in 1/2 cup increments until frosting has reached desired sweetness and consistency (you may need a little less/more than recommended amount).
- Ice the cooled cupcakes, as desired. I used a pastry bag & large star tip to achieve my look.
- Sprinkle on large sugar crystals to look like salt
- Optional: Sprinkle on a little sea salt for authenticity 🙂
